                                                                    Vegetable Quiche

       1 1/2 c. cooked brown rice, room temperature             1 c. egg substitute, divided (Egg Beaters)      
  3/4 c. shredded low fat cheese, divided                       
 1 1/2 c. fresh broccoli flowerettes, steamed and drained                                        

 3/4 c. sliced fresh mushrooms                                       1 c. skim milk
 1 tbsp. butter, melted

Grease an 8x8 pan or 9 inch pie pan. In a bowl, combine rice, 1/4 cup of egg substitute and half the cheese; mix well. Pat into the bottom and up the sides of the pan. Place broccoli flowerettes in a small bowl with 2 Tbsp. of water, cover and microwave for 2 minutes. Drain the broccoli well and place over the rice. In a small saucepan, melt the butter and saute the mushrooms. In another bowl, combine the remaining egg substitute, milk and mushrooms. Pour over the broccoli in the rice crust. Bake, uncovered, at 375 for 20-25 minutes or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese and return to the oven just till the cheese melts. Serves 4-6
 
   
   

                                                  Sugarless Fruit Muffins

                                 1 c. chopped dates                            1/2 c. raisins
                                 1/2 c. chopped prunes                       1 c. water
                                 1/4 c. butter, cut into pats                 1/4 tsp. salt
                                 2 eggs, beaten                                   1 tsp. vanilla
                                 1 c. flour                                            1 tsp. baking soda
                                 1/2 c. chopped nuts

In a saucepan, combine dates, raisins, prunes and water. Bring to a boil and boil for 5 minutes. Stir in butter and salt. Set aside to cool. Add remaining ingredients; stir just until dry ingredients are moistened. Spoon into greased muffin tins. Bake at 350 for 15 minutes. Makes 12 regular size or about 32 mini-muffins.
